(Made with Steamed Fruits and Vegetables)
If you’re looking for a simple and nutritious meal for your baby, these healthy pancakes are one of my favorite things to make. They’re soft, easy to eat, and packed with fruits and vegetables. The best part is that they only require a few ingredients and come together quickly.
This recipe is something I make often for my baby. I simply steam different fruits or vegetables, blend them until smooth, mix them with an egg, and cook small pancakes in a little olive oil. It’s an easy way to add nutrients to your baby’s meals while also creating a food that’s perfect for little hands to hold.
Why These Pancakes Are Great for Babies
These pancakes are not only healthy but also great for your baby’s development. Because they are soft and easy to grasp, they help babies practice self-feeding.
They can help support:
- Pincer grasp development
- Fine motor skills
- Baby-led weaning
- Exposure to different flavors and nutrients
Since you can switch up the fruits and vegetables, it’s also a great way to introduce your baby to a variety of foods early on.
Ingredients
One of the things I love most about this recipe is how simple it is.
You only need:
- 1 egg
- ½ cup steamed fruits or vegetables (blended into a puree)
- Olive oil for cooking
That’s it!
Fruits and Vegetables You Can Use
You can use almost any fruit or vegetable. Some great options include:
- Sweet potato
- Carrots
- Pumpkin
- Zucchini
- Apples
- Pears
- Bananas
- Spinach
You can also add legumes which are a great source of protein and fiber:
- Black beans
- Lentils
- Chickpeas
How to Make These Baby Pancakes
- Steam the fruits or vegetables until they are soft and easy to blend
- Blend them into a smooth puree – this is the baby food maker I use to steam and blend them!
- Add 1-2 eggs and mix well until the batter is combined
- Heat a pan with a small amount of olive oil over medium heat
- Spoon small amounts of batter into the pan to form mini pancakes
- Cook for about 1-2 minutes per side until lightly golden and cooked through
- Let the pancakes cool before serving them to your baby
How to Serve for Baby-Led Weaning
These pancakes are soft and easy for babies to eat, making them great for baby-led weaning. You can serve them whole or cut them into small strips or pieces depending on your baby’s age.
Because they are easy to pick up, they help babies practice their pincer grasp and build fine motor skills while eating.
Meal Prep Tip
These pancakes are also great for meal prep. You can make a larger batch and store them in the fridge for a few days or freeze them for later.
We love these Moonkie silicone containers to store the pancakes in!
To reheat, simply warm them in a pan or microwave until heated through.
